I'm looking for diet-friendly, low-cal recipes (can be any mix of protein/carb/fat) that will make me feel like I'm having a satisfying yom tov.

I'm looking for both dairy and meat meals.

Does anyone have any good recipes or websites to recommend? TIA.

Greek yogurt cheese cake

Lots of salads with lean meat or chicken or turkey toppings.

Baked eggplant Parmesan

Grilled chicken

Grilled vegetables

Butternut squash fries

Soups

Dessert:
Plain baked apples
Sugar free jello
Light popcorn
Nuts

Thank you! I was waiting for such a thread. Especially after I saw the other shavuos one!! LOL
Brocoli kugel (can be made with just egg whites)
Mushroom soup
Zuchinni soup
Roasted cauliflower
Fruits for dessert, ices from the store for the kiddos!
I make a diet cheesecake with fat free cottage cheese, light vanilla greek yogurt, 2 eggs, splenda. You can add 1/2 of diet instant vanilla pudding (for flavor and texture).
Bake in cupcske holders so it's portioned already! You can crumble some cookies on bottom, taste better but also add calories!

The Atkins cheesecake is delish- low cal and sugar free

Helps me feel not deprived amidst the glut of cheese and cream.

There was a really good recipe in I think a Jewish magazine for avocado chocolate pudding. Not really low cal bec of the avocado, but healthy. Does anyone have it?

It’s probably the recipe from Rorie. Check kosher.com

There is a good eggplant parm recipe in the cookbook Secrets of Skinny Cooking. Other good recipes in there as well.

Last year I made my regular cheesecake recipe but savoury. A caramelized onion layer, a spinach layer and a cooked salmon layer. It was delicious. No sugar, no sweeter, no grain or starch. Used almond flour and butter for crust.

Not low cal, but extremely satisfying.

Avocado pudding is a crime against food. It takes two wonderful things, avocados and chocolate, and makes them into one disgusting mess.

Save the avocado for salads, salsa, or guacamole dip.

Bake a low cal chocolate cheesecake for dessert. Dark chocolate has fewer calories than milk chocolate, and is more satisfying.

I make a vegan creamed spinach recipe

Take a bag of cauliflower and cook until soft
Let it cool a bit
Blend till smooth
To this add salt to taste, a teeny bit of lemon juice or ACV, and the secret ingredient 1/4 cup nutritional yeast.
Taste and adjust your seasoning
If you want it more”cheesy” add more nutritional yeast, but not too much
If you want it more tangy, add more lemon juice
This is the “cheese sauce”

Now take the frozen spinach and sautée it until it’s completely defrosted and hot,
Do not over cook.
Salt the spinach to taste

While on a low flame mix the sauce with the spinach, simmer until it’s bubly about 2-3 min.

It’s so yum
I make this almost every Shabbat.

Heat frozen vegetables. Easy and yummy. I throw it in my oven on yom tov so no advance prep needed

Frozen broccoli with crushed garlic and salt.

Frozen cauliflower with zatar.

Frozen sugar snap peas with canned baby corn and diced pepper.

Frozen green beans with salt pepper soy sauce and a drop honey.
