What types of steak and roast have soft meat?

I don't make meat often...

Which types of steak and/or roast have soft meat? Like melt in your mouth?

It also depends alot on how you cook/bake it. Most steaks are soft.
Flanken is very soft
Swiss steak
Minute steak
Brisket
French roast.... basically anything.

Does anyone have easy recipes that are not overnight and are extremely soft? The only way I manage to make it very soft is overnight-7-8 hours in oven covered with liquid at 275. I love it!!!! But sometimes am short on time and then it always flops when I try new ways it isn't soft.

I thought french roast is the softest. I started making it with red wine and tomatoes and paste and fill it with liquid up to half the roast. Than I simmer it for about few hours and it comes out soft. Is any other cut softer?

When I think of soft meat I think of beef cheek and tongue. Steak is not soft

Flanken or spare ribs in bone sucking sauce(store bought), cover and cook on 250 for 4 hours. I make it on yom tov,because my oven is set to 250. Fresh, soft, fall off the bone, yum! Also pot french roast (made in pot)is amazing soft and succulent!

There is no shortcut to achieve soft melt in mouth meat. Most cuts need minimum 5-6 hours depending on the size.
Minute steak, club steak, or flanken can be good after 3-4 hours.

How do you cook, say, minute steak (not roast) for it to come out soft? Pan or oven? How long?

I do minute steak in the oven.
Dice 2 onions in large cubes. Toss in oil and spices. Place steaks on top. U can add any some veggies if you like. I Add peppers, mushrooms, baby corn
Spread duck sauce on each steak. Cover tightly and bake at 350 for about 3 hours. Comes out buttet soft.

Very true.
OP, try to use a lot of dry red wine (not sweet!) when cooking. Makes the meat more tender. Also marinading with dry red wine is good.

I usually go for minute steak and flanken for soft meat. This Pesach I made deckel for the first time. It was super soft and delicious.
