I don't like the garbage can cabinets either, especially if you're short on space. They get pretty gross inside and on the tracks, and they can be hard to clean.

My must-haves: an instant hot water faucet, built-in soap dispensers, garbage disposals (in every sink, if you have more than one), huge sinks, and sink grids that fit the sink perfectly (many manufacturers sell grids, AKA sink protectors, that are made for specific sinks - they can be expensive, but for me, they're worth it). Also, cutlery dividers that are designed to fit the drawers.

I'm redoing my kitchen now too. An appliance garage is on the counter. Like in a corner with a garage door sort of coming down hiding the appliances. What op is asking abt I'm actually doing from a bottom cabinet with the shelf sliding up with the push of button. I wanted to do the garage but it wasn't worth it for me to loose counter space as my kitchen isn't very big.

Open shelves may be popular but extremely impractical. Items get dusty and need to be washed out before use. And you need to have it perfectly neat all the time. Who needs it?

We've had one for almost 20 years. It's called a Magic Corner here.
It broke once - early on - cause I overloaded it. I used to store my Kenwood mixer on the part that attaches to the door, not realizing that it was too much weight on that part.
Since we've had it fixed though it's been problem free.
I love it. I use it as an auxillary pantry (in addition to my main one) and to store canisters of grains/pulses as well as my baking ingredients. It holds a ton of stuff.

It helps a lot to go look at ppl who recently built or redid their kitchen. I did that. It helped a ton. It helped me decide exactly what size cabinets / drawers I want.

I looked this up, not quite what I had in mind but it lookes useful if there is space for deep counters.
I was imagining something like this

Looks so cool, but are there issues using this on Shabbos? Can you disable to SmartTouch technology?

I have in one drawer a built-in silverware holder with compartments. It slides back to reveal another one, so it's essentially double decker.
I keep my milchig stuff in one, and fleishig in the other. Or if you have two sets of each (like nicer silver for Shabbat) you could do this. Fits in one standard drawer.

I know someone who has this for their kitchenaid/bosch and it's awesome!!

Also, I second NOT having a faucet over the oven. I actually like the garbage cabinets, because garbage cans are unsightly.

I love it when all appliances look like cabinets. I love ice cabinets, even though I'm one of the few that does.

Also, ask your contractor to put all your outlets under the cabinets so that they don't break up the backsplash. Along with the lighting under the cabinets.

Regarding the garbage can cabinets, a friend gave me advice that I am always blessing her for.

I hate the look of a garbage can around when the kitchen is clean, but like it out while I work. I also don't like the pullouts because the get stuck and dirty. She told me to just install a cabinet tall enough (without a drawer on top) to storage the bin in between use. I love it! I take the bin out when needed and then tuck it way when the kitchen is clean!

I appreciate my corner bottom cabinets. I use them to hold things like a stack of big round mixing bowls and big bottles of oils. And shabbos urn & crockpot in the other one.
On the meaty side I use the upper corner cabinet for big round platters, bowls, tureen and I wouldn't give that space up.
But on the dairy side upper corner cabinet I wish I had a huge 3 shelf lazy susan installed for all vitamins/first aid/medicines. It's tough to have that put in when the cabinets are already installed.

I personally love my pot filler. I was also careful to get faucets that have hot and cold levers on either side so as not to have any problem with accidentally turning on the hot water which tends to happen with those one-armed faucets. Definitely get largest sinks you can. I also have 2 fleishig dishwashers which I adore - even just to store the dirty dishes in until after shabbos.

I also know someone who has the lift up shelf and wanted one until I saw it. It is always dirty with flour and a pain to clean.

Garbage cabinet is also hard to keep clean but I’ve seen some that are. I once sa where the cabinet floor was missing and garbage was on floor. So easier to keep clean but not perfect.

Personally I love large walk in pantry or Butler pantries.

I've had one for almost 35 years (in 2 different homes) and never had that problem. It gets some flour on it which is easily wiped out. When the mixer is in use the shelf is pulled out of the cabinet so nothing gets in there.
