Can anyone suggest keto friendly lunch and snacks while traveling? Needs to be able to hold up without refrigeration for 48 hours. Suppers we are eating out so that's taken care of.

Maybe you can freeze stuff like chicken nuggets coated with nuts & then it will be ok when defrosted. Freeze chicken patties.

Also if you can use an icebox with ice packs to prolong freshness. When you get to hotel you can take ice from machine & add to ice box or buy ice by a gas station

Can you have a cooler with ice? That would allow many more possibilities.

Baby corn is actually very low carb as opposed to regular corn which is very hi carb.

Half an apple shouldn't be so high in carbs
