1/2 cup oil
1/2 cup water
2 cups flour
1 tsp salt
1 cup mashed potatoes
Mix with wooden spoon
Pinch off (walnut size) balls and flatten. Fill with filling (reg mashed potatoes with onions is good) and grab the edges around the filling and pinch closed. Put pinch side down on a cookie sheet and brush with egg yolk. Bake 15-20 min on 450. The knishes come out looking like small balls if you don't like it you can press them gently to flatten them

Classic Potato Knishes
3/4 cup oil
3 cups flour
1 cup water
pinch of salt
4 onions, diced and sauteed
10 potatoes, cooked, peeled and mashed
salt & pepper, to taste
Make a well with the flour; pour liquid ingredients inside the well. Knead into a dough.
Divide dough into 3 balls. Roll out into rectangles.
Mash potatoes with sauteed onions and season with salt and pepper to taste. (Add some eggs while mashing if you'd like them fluffier.)
Fill each rectangle of dough with mashed potatoes. Roll each one into a log and arrange seam side down.
Brush with egg. Sprinkle with sesame seeds. Cut slits into dough before baking.
Bake at 375 until golden.
