Really simple- lettuce, strawberries, blueberries, glazed pecans, and feta. Lime basil dressing. Will send when I get home from work.

Sounds loaded with sugar (plus 1/2 C sugar in the dressing?).

Right? Might as well just enjoy a dessert instead.

I’m a fan of the classics. Caesar and Greek. But real Caesar dressing. Not mayo goop.

What is a Euro mix? I'm guessing its not different denominations of euro coins. Is it food representing different countries of Europe? Cabbage for germany, leek for wales, etc?

I got this recipe from ami magazine in 2014. It’s amazing. I sometimes make it pareve without the cheese.

Eggplant Feta Salad.
3 -4 tbsp oil
1/2 eggplant cubed
1 (8 oz) bag romaine
1 cup cherry tomatoes, halved
1/2 red onion, diced
1 cucumber, peeled and diced
3 ounces cubed feta

Dressing:
3 Tbsp mayo
1/4 cup olive oil
1 tbsp parsley flakes
2 cloves garlic, crushed
1 Tbsp sugar
1/8 tsp salt
1/2 Tbsp mustard powder
1 Tbsp chopped scallions
1 Tbsp lemon juice

Preheat oven to 350. Coak a baking pan with oil. Add egplant and toss to coat. Bake 20 minutes, turning pieces halfway through to brown evenly (I cook longer ).
In large bowl combine lettuce, tomatoes, niion, cucumber, feta and hot eggplant (I make it in advance and use cold).
In a bowl mix dressing ingredients and toss with salad before serving.

Lol. One of the lettuce variation in your local grocery...I’m almost sure it’s called euro salad mix. Alternately you can use romaine

I googled because I didn't know what this was either. The first hit I got was an imamother post from a few years back in which I asked the same question!

If I'm doing rich dishes with cream or cheese I like a lighter salad, but if I want a specifically dairy salad I make homemade ranch dressing. It goes really well with romaine (or another lettuce with some heft and crunch to it) and vegetables like radishes, peppers, cucumber.

Watermelon and feta is a really good combination.

Leave people alone. Everyone's entitled to their own tastes without being picked on.

years ago mixing fruits & vegetables was unheard of. Today it's a very accepted combo. YE chocolate is a new one, never heard of that. Someone has to be a first to come up with innovation & people follow
