Anyone know of any really yummy thick ganache I can use to cover the cracks of my poor but delicious cheese cake?

This is the one I use for my Pesach flourless chocolate cake. It's simple and delicious.
1 cup chocolate chips
1/2 cup heavy cream
Melt chocolate and cream in microwave or on stovetop. Don't boil. Stir.
Spoon over cake and let drip down the sides.
Let set for several hours.

Its not a recipe. Literally just melt chocolate chips in heavy cream over a double boiler. More cream will make a more runny ganache.

By definition, it IS a recipe, but admittedly, it's a short one.
And it never hurts to provide detailed instructions.

I've had no trouble using regular chocolate chips, even the "Jewish" brands, which is all that's available to me on Pesach, when I make this recipe. The ganache is very smooth.

It’s your preference. And if I were in a pinch, I also would use chocolate chips. But chocolate chips have added ingredients to keep their shape. So if you want good quality and tasty results, you need to put in good quality ingredients.

It’s a technique. Now for the recipe.
For the ganache to cover a cake.
Chop 8 oz of chocolate.
Bring a cup of cream to almost a boil (or heat it in the microwave)
Pour cream over the chopped chocolate and let stand for about 5 minutes.
Whisk
Let it sit a little bit before covering your cake.
For truffles, use 2:1 ratio. 8 oz of chocolate and 1/2 cup of cream
For pouring over or whipping ganache, use 1:2 ratio. 4 oz chocolate, 1 cup of cream

The pesach chocolate chips melt well because they don't have some of the ingredients they put in to help them keep their shape.
