Please help me come up with some ideas!! The most simple, fast you have-somewhat healthy
Like an easy (explain clearly) salmon pasta dish.
A sushi salad that doesn't need me to make a dressing from multiple ingredients.
Quiche-Dairy or Pareve (maybe with cottage cheese and mushrooms?)
Easiest Sweet Salad-Romaine, mango, etc.
Super Easy Pasta Dish.

Spinach Quiche :
3 onions
Oil
10oz spinach
1lb cottage cheese
2 eggs
8 slices Muenster cheese
Salt
Pepper


Sauté onion
Add spinach
Separate bowl add other ingredients
Pour hot spinach into egg mixture
Pour in pan , bake @350 40-45 min

I make an easy salmon pasta salad using (leftover) baked or poached salmon, cooked pasta, cut up veggies, and any dressing I have around. Proportions are totally flexible based on what we have around. I also make something very similar using cut lettuce and cabbage in place of pasta - also delicious served in a pita!

Mushroom Quiche
2 large sweet onions, diced
3 garlic cloves, crushed
oil
2 (8 oz.) packages mushrooms, sliced
salt & pepper
3 large eggs
1/2 cup mayonnaise
2 tablespoons corn starch

Preheat oven to 350°F.
Saute onion and garlic in oil until softened. Add mushrooms and brown. Season very generously with salt and pepper, taste and make sure that it's tasty and very well seasoned. Remove from heat.
In separate bowl, mix eggs, mayonnaise and corn starch starch. Add mushroom mixture and mix well.
Pour into a greased 9" round pan and bake for 45 minutes.

You can add cheese to the mixture for a dairy quiche.

Cheese Stuffed Manicotti
1 (16 oz.) cottage cheese
2 (8 oz.) shredded cheese, divided
2 eggs, lightly beaten
2 tsp sugar
3/4 tsp salt
2 dashes coarse black pepper
12 manicotti pasta tubes, uncooked
1 jar marinara sauce

Preheat oven to 400°F.
Spoon some marinara sauce on bottom of a 9x13 pan.
Combine cottage cheese, half of the shredded cheese, eggs, sugar, salt and pepper.
Stuff uncooked manicotti generously with cheese mixture, from both ends (you can use a Ziploc bag with the corner triangle cut off to pipe the cheese in).
Arrange manicotti in a single layer in the pan.
Pour sauce over manicotti, covering the pasta completely.
Cover baking dish with aluminum foil, crimping edges to seal tightly.
Bake for 40 - 75 minutes (depending on oven), until pasta has softened and cheese is melty.
Remove foil, sprinkle generously with remaining mozzarella.
Bake uncovered for 5 minutes until cheese is melted, or just cover the pan and allow the cheese topping to melt for 10 minutes on the counter.

baked salmon is easy. serve with mashed potatoes or angel hair pasta sauteed with minced garlic oil salt & pepper.

easy salad. Ready checked bag lettuce. grape tomatoes. shredded two toned cheddar cheese. Ready store bought lite nish nosh dressing.
easy mushroom cheese quiche.
3 sm onions sauteed. once done add:
16 oz canned mushrooms, for 1/2 hr. close flame.
let cool. add 2 eggs. 1 tsp salt. 1 dash black pepper. 2/3 cup topping. 1/4 cup mozzarella cheese. mix in pot. pour into 9 inch Unger's frozen tart shell ( made from dough).
bake 1 hour on 350.

easy pizza wheels.
roll out store bought pizza dough. Add pizza sauce & shredded cheese. Roll up like a jelly roll. cut into slices. lay slices flat on a cookie sheet with filling facing up. bake till done.
You could prepare raw & freeze & just bake before serving for it to feel like freshly done.

Bobov cookbook has a one bowl easy cheesecake recipe on pg 100.

Choco chip cheese pinwheels.
rolled out flaky dough. Smear with whipped cream cheese. Sprinkle on sugar & Choco chips. Roll up jelly roll style. cut into slices. lay flat on cookie sheet, filling side up bake.
sprinkle with confection sugar before serving

Penne ala vodka - from wisk magazine 2012 (fake it don’t make it Smile )
Heat 1 jar vodka style marinara 26 oz. add 2 cups heavy cream. Add Parmesan cheese (I never do). You can add more garlic to taste. Toss with cooked penne.
Makes a lot of sauce. It thickens as it sits.

Sushi salad

I make my regular sushi rice recipe with rice vinegar, sugar, salt.
Later with veggies (cucumber, carrot, avocado). Juliane or cut with peeler into ribbons to look pretty.
Dice salmon on top (I use leftover from other meals)
Sprinkle with soy sauce. Sprinkle with sesame seeds.
I like to layer individual portions in clear cups. It oooks so pretty.

Challah. You need something whole for hamotzi but you could also have garlic bread, cheese bread, etc.*
Salmon - slice into pieces, marinate in a thick teriyaki sauce (Soy Vay) and honey, bake uncovered 20 minutes or so
Greek salad
Blintzes - homemade or store bought

Buy a nice milchig ice cream/gelato.

It's late. You don't need a lot of options, just enough of what you do have if people are hungry.

*My interpretation of KBD for Kids stuffed cheese bread: Buy frozen bread dough. Thaw and cut each one (1 lb. each) into 20 pieces. Melt butter/margarine seasoned with garlic, oregano, onion powder, salt. Make your life easier and buy a block of mozzarella. I think 1 lb. Cut into 20 chunks. Wrap the piece of bread dough around the cheese. Roll in the butter.
Place in a 9" round pan (or do 2 lbs. in a 9x 13.) You can drizzle the excess butter over the bread if you wish and sprinkle cheese (Parmesan or whatever you'd like) on top. Bake at 350 and check after 20 minutes. Freezes fine.

Easy lasagne

Pour some sauce into a pan, to lightly coat bottom. Add a layer of lasagna noodles (uncooked is fine). Add a few spoons full of ricotta (about 1/2 of a small tub), cover with more sauce, add some shredded mozzarella. Then next layer of noodles. Repeat. Final layer of noodles. Sauce. Sprinkle with parmesan. Bake. Eat. Enjoy.

Mushroom quiche

Sautee a chopped onion. Add 8 oz sliced mushrooms and saute. Allow to cool, then add 3 eggs, 1/2 cup heavy cream, 1 cup shredded mozzarella/cheddar mixed cheese. Bake one hour at 350.
