Which foods can I freeze?

Any experienced Yom tov makers?
I am hosting for the last Yom tov meal and I want to cook everything before Yom tov and just warm up on hot plate. Which foods freeze very well?

kreplach ( could fill & freeze raw)
cheese blintzes
cheesecake without sour cream topping
dairy cakes & muffins

dairy miniatures/chocolate truffle logs

You can fill eggrolls, spring rolls, wontons & fry before serving

chicken cutlet can get dry when reheated. It's only good if it's a recipe with a gravy or sauce so it shoudn't dry out.
You can also bread cutlets & freeze raw in single layer or with parchment paper in between layers & fry before serving.
You can prepare roll ups raw & bake before serving

As far as rice if it isn't overcooked & if it is mixed with veggies it can be frozen. You don't want it to become too mushy

For broccolli or cauliflower kugel I would underbake & bake for longer when reheating to avoid it being watery

Thanks! The only issue is that I'm only leaving a hot plate on a timer, no oven or flame, so everything must be fully cooked before.

Should be fine. Undercook a bit so you can still reheat it.
