I'm going to make a few cakes tonight (Wednesday) that I'd like to serve for Shabbat lunch. Will they be better if I just keep them in the fridge till then or should I freeze them until late Friday. TIA

I would freeze. I think it tastes fresher that way. Take it out the night before and let it defrost on the counter

The night before is Thu night. Freeze just for 1 day?

Never refrigerate baked goods. Due to a complex scientific thing about the way starch molecules absorb and lose water, refrigerator temperature is ironically the precise temperature range at which baked goods go stale fastest. If you’re not using them right away and you fear dryness or mold, freeze.

What if I want the cake to be on the counter for the morning/as a snack between meals, on shabbos, Sunday, and Monday? Do I keep it on the counter for 3 days?
Can I take it out of the freezer Friday night to defrost?

The night before is Friday as they’re for Shabbat lunch.

Feeze till shabbos and keep it on the counter well covered over yom tov.

If your able to o would cut the cake cake however much you will need for the first day and freeze the rest. Keeping the sliced peice in a airtight container. room temp should be fine
