Eggplant parmesan without parmesan

I think I'll make my eggplant paremesan with morzarella and marinara and no parmesan, in case people dont want to have to wait for 6 hours for meat? Will this come out ok without parmesan?

I think it would be delicious.

If you want an extra "cheesy" flavor, you can add some brewer's yeast to the bread crumbs before you fry the eggplant.

Yes. I've never used Parmesan cheese on eggplant Parmesan.

I bread the eggplant, bake or fry
Make a sauce with tomatoe sauce and spices, basil, oregano, garlic powder , onion powder and a drop of sugar.
Sprinkle pizza cheese and mozzarella cheese on each layer with sauce . I use an entire package of both types of cheeses for a 9x13 pan

Yes it's delicious. It's even good without any cheese- just eggplant and tomato sauce.

Yes, I never make it with parmesan.
I fry prebreaded eggplant. tomato sauce (mixed with spices - oregano, garlic powder , salt, black pepper, onion powder and a drop of sugar. ) then eggplant, sauce, shredded mozzarella cheese and repeat. end off with cheese. its yum!

I never use parmesan cheese. I use mozzarella cheese.

I wait 6 hours with mozzarrela too. I envy your minhag.

I also roast eggplant sliced the long way, layer with sauce and cheese without breading. GF eggplant parm.

I sometimes layer slices standing up, eggplant, sliced tomatoes, sliced onion rings, sprinkle basil and oregano and evoo. Bake long time. Deconstructed eggplant, DF, GF.
