Dark chicken cutlets help

I got a huge pack of this instead of capons what could I do with it ?

I only use dark chicken cutlets.

1.Saute peppers with onions. Bread chicken in flour and sweet and sour duck sauce. Put in foil the peppers-onions. Ontop the chicken. Cover tightly .bake for 1 hr on 350 and uncover for additional 15 min.

2. U can bread regularly, smear Mustard Ontop, add pastrami and roll into a circle. Stick in a toothpick for it to hold. Bake uncocofor 25-30 min.

Many more options. Want more?

BTW it has Alot of white fats and blood stuff that needs to be cleaned thoroughly

Use a kitchen scissors to remove the bones.

Dip into corn starch eggs breadcrumbs and bake. It’s delicious

It's superb grilled, too! Even without marinades or spices, you can't go wrong with those.

That is the entire recipe!
Dip cutlets into store bought pesto (or homemade, but I don't have a recipe for that), then bread both sides in cornflake crumbs. Spray with Pam. Bake at 375 or 400 (I don't remember) for 25-30 min.
