In my opinion ( in the tri state area) mature Atlantic salmon has a slight fishy taste and does not compare in taste to the more delicate baby salmon.

Regular salmon is better for
Grilling baking....
Baby salmon is best for poaching (shabbos fish style)

Baby salmon as sold in Jewish stores is really steelhead trout. (I found this out from the Freunds website.)

They are different species of fish. But if you want less fishy salmon, I've found Scottish salmon to be much better(albeit more expensive).
