I made this this shabbos and it got raves. I roasted the kernels from 2 ears of corn with an equal amount of grape tomatoes, drizzled with olive oil. Roast until the veggies have started to caramelize at the edges. Meanwhile, I cooked a cup of quinoa. When everything was ready, I combined it, including the oil in the pan, and added salt, pepper and scallions. (The scallions are there mostly for color, so add as many as you think look nice. )
It''s all gone.

I make an Israeli style salad
All begs you like diced
Lemon olive oil salt pepper
And toss into cooked quinoa
Yum
Or toss with small pieces grilled or roasted veg of your choice
Salt pepper olive oil and lemon juice or vinegar of your choice

My family and I are all convinced that the quinoa craze is a scam. Kind of like kale was a few years ago. Everyone pretends to love it, but in reality, it doesn't get eaten up. So, I mostly use it on Pesach. That said, I do find that quinoa is best when it is cooked without covering, as suggested in this blog: https://cookieandkate.com/perfect-quinoa/. There are also links to some reasonably good salads on that webpage.

Think of it as a base for anything. We like it with various veggies and a nice lemon dressing, or even just with toasted sesame pil, salt and slivered almonds. And sorry Joyinthemorning, I disagree. We love it. To each their own.

We love qunioa. It is usually not cooked correctly.
1 Rinse more than 30 seconds using a fine mesh colander.
2 Saute the quinoa in olive oil. About a tablespoon oil for a cup dry quinoa. You can smell when the quinoa is ready for liquid. It has a slight toasty smell for lack of a better way to describe it. Use 1 and 7/8 cup children soup broth. Cook covered until qunioa has a tail.
You can substitute 1 and 7/8 cup water and consume powder for chicken soup broth. Cook covered. (I don't like cooking with consume powder.)
I think you will find the slightly less liquid keeps the quinoa firm.

First, I totally agree with squishy. Most people tend to overcook their quinoa and use too much liquid, the result being a gross mush. But cooked correctly, it's a great menu ingredient. Flavorful, texturally engaging, and versatile.
One easy recipe is to make (gluten free!) tabbouli with it. Just swap out the bulgar for quinoa. I make mine with cucumbers, tomatoes, garlic, onion, lots of parsley and mint, and a lot of lemon, salt, pepper, and olive oil (it really soaks in the seasonings so be generous).
