I'm breaking my head over what to make for dinner this week. I don't want to make different menus for everyone every night.

We have:
A fish allergy
Severe dislike of breakfast for dinner
Pizza is considered a snack/small lunch
Nor does anyone like pasta


Anyone up for a challenge?

Lentil burgers in buns with fry sauce, slices of onion, tomato and pickle, and of course French fries on the side.

Eggplant parmesan, Caesar salad and a hearty soup.

Falafel balls in fresh pita with avocado relish and homemade tehina. Maybe majedra on the side.

Hot enchiladas, hearty salad with black beans, avocado and shredded cheese.

Veggie burgers with all the fixings and fries, veggie stir fry and rice, quiche, hearty soup and bread (yes we are crazy for eating soup all year round and we live in Israel so it’s pretty hot now), quesadillas, taco salad

Lentil Burgers

2.5 cups cooked lentils (1 1/2 cans rinsed & drained) or use 1 cup dried and cook until soft
1 tsp curry powder
1 tsp coriander
1 tsp cumin
salt
1 Tbsp olive oil
1 large onion, chopped
2 garlic cloves, finely chopped
1/4 cup carrots, finely chopped
2 Tbsp flour
2 Tbsp tomato paste mixed with 1 Tbsp soy sauce
1 cup bread crumbs

Place lentils and seasoning in a food processor fitted with the S blade.
Heat a skillet, add olive oil and saute onion, garlic and carrots. Add to food processor.
Process lentils and veggies until smooth. Add flour and tomato paste mixture and continue processing. Add breadcrumbs slowly. Taste and add salt as necessary.
Form mixture into balls and then flatten into patties. Place on an oiled baking sheet. Bake at 350 for 20 minutes. Turn over and bake an additional 20 minutes.

For fry sauce, mix 1 part ketchup, 2 parts mayo and season very well while tasting with onion, garlic, salt and pepper.

Fill up on soups!

Minestrone is very filling if you put pasta in.
And mushroom barley soup.
Would you guys eat pizza with a soup and salad?
How about falafel?
Shakshuka? (Ramen shakshuka is my fave!)
Veggies burgers? I have a great recipe for chickpea burgers, if you want!

Dont forget smoothies for dessert Very Happy

Cheese latkes (or any type of latkes for that matter..)

ra_mom what kind of lentils do you use for the burgers (red, brown, green) or doesn’t it matter. Recipe sounds delish and really want to try it.

I'll do falafel,
lentil burgers and fries
creamed spinach, mashed potatoes and chickpea burgers if I can get that recipe please,
eggplant parm and soup.

That leaved me with just one more night. Maybe I'll do a parve cholent with kishka?

Homemade fresh rolls with vegetable soup
Shakshuka, toast and salad
Tuna patties, broccoli quiche, mashed potatoes
Eggplant Parmesan, potatoe knish and salad
Plain Greek yogurt with strawberries and sweetener (instead of sour cream)
Paninis
Cheese latkes
Cheese blintzes

Whenever you need fillers add soup or salad

omelets and grilled cheese are breakfasts Sad so is anything with bread. I love them but my family complains if I try to pass them over as dinner. Shakshuka too. "We didn't eat supper yet!" at bathtime

Yogurt doesn't go over well at all, and I have't made tuna patties in years because of the fish allergy.

Maybe I'll do knishes one night! that'll make them excited.

Here's another lentil burger recipe

fry 2 lg onions, add 1/2 c grated orange veg for last 5 minutes, add 1 1/2 c red lentils with water to cover and about 1-2 tsp hawaj or other soup seasoning. Cover and cook until all liquid is absorbed. Add up to 1/4 c quick cooking oats or breadcrumbs and an egg. Form into patties and bake for about 20 minutes.

Here you go:
BURGER-
3 garlic cloves
2 diced onions
3 Tb olive oil
1 C canned chickpeas, mashed
1/4 C breadcrumbs
1/4 C diced celery
1/4 C diced carrots
1/4 C pine nuts or walnuts
1 Egg
1/2 tsp cumin (optional)
Salt+pepper
Oil for frying

*preheat oven to 400°.
*combine garlic, onions, olive oil, salt+pepper on baking sheet and bake for 10-15 min until onions are translucent. Let cool a little, and then either grind to a paste in blender or food processor.
*combine onion paste, mashed chickpeas, breadcrumbs, celery, carrots, nuts, egg, (cumin), salt+pepper
*shape into patties and fry until bottom and top are golden. Then bake for 10 min.

I serve on english muffins, because YUM. But you can serve on burger buns or pretzel buns or eat em plain!

TOPPING IDEAS-
Ranch dressing (or any creamy dressing)
Caramelized onions (my fave!!)
Cheddar cheese
Guacamole
Tomato slices
Lettuce

cheese blintzes, lukshen cheese kugel, baked potatoes stuffed with melted cheese and/or broccolli, mozzarella sticks, broccoli/cheese soup, baked ziti, french onion soup with cheese & croutons, different type of salads, a layered ratoutille with cubed zucchini, cubed potatoes, tomatoes & melted cheese made in a pan on stove, layered potato & eggs in oven could make pareve or dairy with sour cream/melted cheese, veg cutlets, any veg kugel or latkes, mock liver, avocado salad as appetizer, veg sushi, any stirfry veg-you can add melted cheese, cheese tortellini, ravioli, pizza snaps as appetizer, strawberries with sour cream for dessert, cold fruit soup for dessert,

My favorite parve dinner, plus it’s low carb .

Grilled porta bella mushroom caps
Mashed cauliflower
Broccoli
You can add a salad also

I love soups even in this hot weather
Grilled cheese
Tomato soup

And what’s wrong with scrambled eggs or omelette every day, switch the veggies
My fave is with fried slices of potato
Or
If you can get ripe plantains, plantain omelet, yum

Menjedra is the typical 9 day food
Rice with lentils
Served with cucumber slices and yogurt
This with some crusty bread yum

You can make tacos and substitute ground mushroom for meat
Add all the fixings and serve some rice with red beans

I find that adults (at least my dh) dont fill up so fast on dairy ( except if you have a main like fish) so I think you need more stuff to make your meals more filling.
( I think for dh, it might be just in the mind, as he is used to fish oppposed to dairy dishes, for non meat meals, while he was growing up). In any case, with dairy you can get full fast, but doesnt keep you full for long & you get hungry fast again, that's why you need more food.

How about that you make couple of stuff beginning of week, so everyone can pick & choose what to eat during week, if you don't want to cook a whole buffet every single night.
