I'm thinking of doing tacos one night. Vegetables coated in taco seasoning and roasted, topped with black beans, cubed avocado and a sprinkle of cheese.

My family won’t eat fish either besides Moroccan fish- so thats definitely on the menu. DH isn’t a dairy pasta fan.

Other ideas: (the hardest part is having no main dish, take three small dishes for one big meal..)
Mini pizzas
Baked Potatoes with veggies and cheese
Hearty vegetable soups
Butternut squash soup
Hash browns
omelettes bar
Lots of frozen veggies as sides broccoli, cauliflower, peas ect
Mashed potatoes
Salad
French onion soup

From frozen pizza dough:
Calzones
Pull apart pizza
Stuffed crust pizza
Garlic knots

Edit- what about potato pizza

Slice in half and bake 400’ for about half hour-40 minutes. Scoop out inside or potato. mix with mushrooms/onions/broccoli ect milk/cheese salt and pepper. Top with mozzarella cheese. Bake another 15 minutes.

I don't eat dairy. My menu is as follows
1. Lasagna. Tofu lasagna for me. Yummmm
2. Homade falalfel and all the fixings
3. Vegetarian Chilli and tacos
4. Fish. Mashed potatoes. Veggy
5. Either shakshuka, Breakfast for dinner (kids don't go for it either much but too bad) or another night of fish or maybe make it own pizza and salad pizza for me.

Do you melt the cheese? And if you do- how?

You can melt the cheese by sprinkling it directly on the veggies as soon as they come out of the oven.
Or you can place the tacos open side up, tightly packed in a pan so they hold each other up, and bake a few minutes until bubbly.
I actually prefer to leave it without melting. And dh probably would prefer sprinkles of feta.

My family is picky and won't eat anything. I am anticipating lots of complaints. I'm considering going on strike and not making dinner.
(Before you call DCFS, my youngest is 15 and they all can(but don't want to) fend for themselves).

I think I got this
Sunday spaghetti dish with roasted sweet potato and feta. Kids got spaghetti and sweet potato as separate dishes
Monday salmon and potato knishes
Tue french toast and salad
Wednesday tuna patties and rice
Thursday baked potatoes with cheese?

this sounds good. do you saute veggies before?
is it basically mashed potatoes with mixed with milk, veggies and cheese?

My menu for the week. It's a lot to make sure there's something for everyone.
Sunday- corn empanadas, cheese empanadas, tuna patties, and salad
Monday- broccoli pizza quiche, vegetable soup, greek salad, sweet potato latkes
Tuesday- quesadillas, onion soup, fresh tuna because my dd asked for it but only for her and a bit more, salad
Wednesday- was going to be stuffed shells, but couldn't find any, so probably anioltis, salad, mushroom soup, eggplant parmesan
Thursday- minestrone soup, cornbread, mozzarella sticks

Tonight I made tuna patties, roast sweet and white potatoes, and peas and salad. You could do corn fritters instead of tuna.

I am also planning:

Lasagna/eggplant parm.
homemade tortillas with refried beans, guacamole, rice, sour cream, cheese, etc.
red lentil curry and rice (cauliflower rice for me)

You could also do baked potatoes with cheese/tuna/baked beans and/or other fillings.

Would your family go for gnocchi? Does quiche count as breakfast food?
