How to steam frozen broccoli without it getting soggy?

If you must steam then for really short 1-2 minutes.

I prefer roasted in the oven. Comes out crispy and more flavorful in my opinion.

How do you do that? My oven has only 2 settings, bake and broil.

I broil mine. Does your broiler have a high and low setting?

I've broiled on both settings. On high you really have to watch that it doesn't burn but takes faster. I usually use the low setting.

I also spray with evoo and salt and pepper first.

Lay out, still frozen, on a cookie sheet sized pan. Place oven preheated to 425 degrees for 25 minutes until just "steamed".

Roasting a vegetable really is baking it. You set the oven temperature appropriately. For some reason people use bake and roast but they both mean food that is cooked in an oven.

In my opinion, there are very few frozen vegetables that are as good as fresh versions because the cellular structure of the vegetable is compromised when it is frozen so it is mushy when cooked. Frozen corn and frozen peas are fine when frozen. Winter squash is okay if you are mashing it.

I always steam my frozen vegetables. Try to turn off the flame before it’s ready and let it sit in the hot steam.

If I remember early enough, I let it defrost (or microwave it), drain it, and then get rid of the excess water with a paper towel. Then I lay it out on a baking sheet for on 425° until it looks crispy. I also mix it in the middle to get all sides done.
