I have lots of extra mashed potatoes. I have no idea how many potatoes are in there. Does anybody have a recipe for doughless potato knishes using cups as measurements versus amt of potatoes?

Just add some eggs and flour to get it to the right consistency, salt pepper, sautéed onions if you like.
Scoop it onto a cookie sheet. Smear with eggs and sprinkle sesame seeds and bake till it looks ready

Start with 2 eggs, 1/4 cup of flour, salt, pepper. Add more if you need.
If you know about how many potatoes you made you can average that amount.
