1 1/3 cups (3 sticks) Betterine
1 1/2 cups sugar
1 1/2 brown sugar
1 Tablespoon almond extract
1 teas. vanilla extract
3 c. flour
3 c. oats
1 t salt
1 1/2 teas. cinnamon
1 full jar Tuscanini Rasberry preserves

1. Preheat oven to 350. Line a hard baking sheet with aluminum (to cover the edges) then with a piece of parchment paper.
2. In the bowl of an electric mixer, cream margarine and sugars. Add extracts, flour, oats, salt, and cinnamon. Mix to combine.
3. Press two-thirds of the mixture into the lined baking sheet. you should be able to cover the entire sheet in an even, thin layer. Spread raspberry preserves across the whole pan, leaving a border at the edges. Crumble remaining dough over the preserves. Bake for 30 min.

Enjoy! Its from the Aug 7th edition. My mags tend to sit around for a few weeks till I take care of them, and your request stuck out in my mind since I was tempted to make these (but didn't), hope they come out good!

Thanks for posting. I also forgot to clip this recipe and had wanted to try it. It’s in the oven now.

I used margarine instead of betterine and regular jam. Looks yummy

Are they comparably priced and designed to be interchangeable in recipes?

I have regular coconut oil in the house. Can I just use that without adjustment?

I made it and it came out amazing !! Maybe too amazing because I are too many ! And it was so easy to make and makes a lot .

I haven't tried it, but I imagine so. Betterine is supposed to be an equivalent substitute for margarine, so if you normally would use coconut oil to replace margarine it should be fine.

I do but I adjust the amount by 3/4 since coconut is solid fat and butter and margarine are not. I was wondering if I'd need to perform the same calculations...

Betterine is a 1:1 sub for margarine or butter.
