Someone told me they have an amazing fail proof recipe, and it works with Spelt Flour too.
Does anyone recognize and use this recipe with Spelt Flour?
6 lb flour
6 cups warm water
5 Tbsp dry yeast
1 1/2 c sugar
2 eggs
1 yolk
1/2 c oil
2 Tbsp kosher salt
Combine 1/2 the flour with yeast, sugar and water. til bubbles.
Add everything besides salt.
Mix on 1 five minutes
Add salt
Mix on 2 five minutes
Let stand 10 minutes
Quick mix
Rise for 1 hour
Braid
Let rise for 1 hour
Brush with egg yolk
Bake at 400 10 minutes, then 350 for 45 minutes.

That's a lot of sugar. Plus, spelt flour is sweeter than regular. Otherwise, it seems fine to me.
