SMOKED WHITEFISH SALAD

SERVES: 4 // TOTAL TIME: 20 minutes
It’s perfect over a bed of lettuce for a light lunch or on sliced cucumbers as an appetizer for a party.
1 large fillet (16 ounces) smoked whitefish (or 2 smoked trout
⅓ cup chopped celery
¼ cup chopped dill
1 tablespoon Dijon mustard
1 teaspoon lemon zest
1 tablespoon lemon juice
¼ cup mayonnaise
1 tablespoon minced shallots
1 teaspoon champagne vinegar
Pinch of pink Himalayan salt
1 tablespoon chopped pickles (optional)
1 tablespoon chopped parsley (optional)
1 Remove the fish meat from the skin and bones and break it into small pieces in a medium bowl. Add the celery and stir.
2 In a small bowl, whisk together the dill, mustard, lemon zest, lemon juice, mayonnaise, shallots, vinegar, salt, and pickles and parsley (if using). Pour the dressing over the fish and celery and gently combine.
3 Serve right away or, for best results, let chill at least an hour.
