Does anybody have the recipe?
I just need the list of ingredients. MIL gave me the recipe she remembers from memory but I'd like the exact recipe so I can make it properly.

Hi here is the recipe. I've not personally made it, but since I have the cookbook here it is:
Carrot Bundt cake:
Cake: 3 cups flour,
2.5 cups sugar,
1tbsp baking soda,
1 tbsp cinnamon,
1 tsp salt,
4 eggs,
1.5 cups oil,
1 tsp vanilla extract,
2 cups shredded carrots (3 medium sized carrots),
2 cups chopped walnuts,
1 cup applesauce,
Glaze: 1.25 cups confectioner's sugar,
5 tbsp water
Preheat oven to 325 degrees. Grease and flour a 10 inch bundt pan. In large bowl mix flour, sugar, baking soda, cinnamon and salt. In a small bowl beat eggs slightly with fork. Stir in oil and vanilla extract. Mix egg mixture into flour mixture. Add carrots, walnuts and applesauce and combine very well. Pour into pan. Bake for 1hour and 20 mins. Cool cake on wire rack for 10 mins. Invert cake onto wire rack and cool completely.
Glaze: Mix sugar and water until smooth. Spread icing on cake.
Let me know if it's good and worth trying. There is also a recipe for muffins using baby carrots I assume it was this one you wanted, if you want that one let me know
