My daughter just started 4th grade and judging from the first 2 days of school she will be getting assignments that are going to be due a few days after being assigned...she already got two such assignments which are due next week...what is the best way to help her organize herself so she doesn’t get overwhelmed? (I always do things that have to get done the night before and I rather her not fall into that habit)

Tell her that part of her homework today is making a plan. Show her the available times for her to work between now and the due date, help her figure out how long each part will take, and write it down when she's going to do it. Then, remind her.
It's a bit labor intensive for you at first, but will pay off hugely for her and for you if she can build the habit of planning.
