I have been doing Keto for 6 weeks. I lost 12 kilos and my energy level and mental focus is better than it has been in decades. I lost my cravings for breads, pastas, sugar etc. My issue is that there doesn't seem to be any Keto Kosher cookbooks or recipes around. There are lots of treife recipes that I adapt but I am wondering if anyone knows if there are any kosher Keto resources available?

I've been on keto for 6 months and lost 30 lb. I eat the Same meals I ate before minus the starch. So if supper was chicken, rice and vegetables, I eat the chicken and veg but not the rice. I do have a vegetarian cookbook I use to find interesting veg recipes but even that depends on my energy level. Plain stir fried or baked vegs works for me.

What exactly are you looking for
Baked goods, mains, side dishes?
Almost anything can have a kosher substitute, or be left out.
Heavy Cream can be substituted with full fat coconut cream
Facon can substitute bacon.
I’ve made crispy chicken skin to substitute pork rinds
I use chicken fat instead of lard

Do you track everything you eat and eat a lot of fat too? I can’t imagine you’re not eating much more fat now than before. Keto is so high fat and I’m having trouble fitting in the high amount of fat I have to eat every day.

Some ideas for a Keto Yom Tov:
gefilte patties (not Keto, for guests)
lox
Chicken soup (substititue the sweet potoato, the parnsip with celeriac and rutagaba)
sauteed leeks and zucchini
Cauliflower Leek kugel
Avocado dips
Eggplant dishes
salads, Israeli, lettuce
Apple salad
cabbage salad
sweet noodle kugel
sweet tomato salad (use xylitol and not sugar)
Use MCT oil for cooking and dressings

I will skip the gefilte and the pasta and sweet potato pie

Pomegranate chicken
sides with meat:Cauliflower Rice, sweet pot pie (not Keto for guests)

Keto Balsamic Roast --another option for fleish

Dessert
baked apples with raising cinnamon and honey

And remind myself Hashem wants me to eat healthy, Choose Life.

I am on keto and have some wonderful recipes. One is for zucchini bites, and they are really simple.

Preheat oven to 400 degrees

Shred 2 zucchinis in a food processor. Squeeze the liquid out before going on. Add 1 egg for each cup of zucchini. Add 1/3 cup hemp seed for each cup of zucchini. Add the following spices for each cup of zucchini:
2 tablespoons parsley
1 tablespoon basil
1 tablespoon oregano
1clove garlic minced
Salt and pepper to taste

Line a cookie sheet with parchment paper and spray with olive oil. Roll balls of the mixture. From 4 cups of zucchini you should get about 25 balls. Place on cookie sheet and lightly spray them with olive oil. Bake until golden on top. These freeze very well.

If you need a YT treat, make this pound cake.

Preheat oven to 375.

6 eggs
1/3 cup olive oil
1/3 cup coconut milk

Place these ingredients into a food processor and just let them mix while you prepare everything else.

In a two cup measure place:
1 cup coconut flour
2 tablespoons stevia
1 teaspoon xanthan gum
1 tablespoon baking powder
1/2 teaspoon vanilla
1 tablespoon cardamom
1 teaspoon cinnamon
Either the zest of 1orange or the juice from 2 orange sections

Dump this.into your egg mixture and keep mixing. Line a loaf pan with parchment paper. Pour in mixture and smooth the top. Bake for about 45-50 minutes. Let cool completely before slicing I to 10 slices.

Enjoy!
