Whats the earliest point this week youd make dressings for RH? how about a strawberry sauce to be eaten with tropical fruit salad?

I think Wednesday-ish. Then it would be about a week or so. If you need to make it Tuesday go for it.

I'm not sure how early I'd make a fruit dressing. (Though I wonder if that would be freezable.)
I would make a tangy, mayo or other type dressing a week in advance.

Ive made strawberry sauce a lot in advance and froze it
dressings with vinegar last a while like a month in our fridge

I’ve found salad dressings sealed in containers last in the fridge. I make a few dressings next week and expect to last through succos.
The strawberry dressing you could probably freeze.
