Thanks for starting the other thread...
but I would like to hear from those of you that make light recipes...
Desperately trying to lose weight, and would like some healthy Lite dishes if anyone can help out!

Here's how I didn't gain weight last yom tov:
100% whole wheat/honey challah or matzah
Homemade treats for myself - mini muffins with no white flour or sugars
Lots of fruits and vegetables I enjoyed, salads, roasted vegetables
I would make some things for the family that I simply didn't eat.
ETA: I don't add sugar or sweetener to proteins.

Hi! Im salmon from the other thread. As I was typing out some recipes I was getting nauseased from myself. The repeat of msg, sugar, and overall garbage in the menu is quite gross. As I mentioned dh and children pick the yt menu. It makes me really happy to cook the foods they look fwd to special for yomim tovim. DH is obnoxiously thin ( over 6 ft 140 lbs) as well as the kids. Im very careful thou bec im not naturally skinny. I cook very healthy during the week and on yt for myself. Some ideas- healthy food really is the best fresh. Marinate chicken before yt and pop it on the grill pan before the meals. Yt is amazing bec of all the fresh veggies you can cook
Here is an idea of a healthy menu
- fish (I love moraccan salmon)
-chicken soup
-toss salas with lots of veggies
- fresh grilled chicken
- healthy sides- cauliflower or broccoli just roasted with spices. Quinoa or brown rice
Green beans or even a 3 bean salad (maybe someone here as a good recipe)

I’m not a dieter but I cook pretty healthy and light- At least compared to the average menu I see on imamother. Don’t have my menu together yet but can post when I do

I’m cooking for both strict dieters and kids who want a Yom Tov menu.
My DH (one of the dieters also eats kizayus red meat every tom tov meal).
Some ideas:
- roasted frozen veggies. Yom Tov morning on real pan roast broccoli or cauliflower or green beans. Works at any temp.
- cauliflower rice
- big leafy vegetable salad at the start of every meal
- a few low sugar salads at every meal
- chicken main besides for the meat
- mini kugels to help with portion control (subbed oil in many with apple sauce)
- plain baked apples for dessert
- use chicken- meat ground blend to replace ground beef.
- serve ‘free’ soups. No one misses heavier soups.
- my kids like white challah - so dieters get their own small whole wheat challah that is the size needed. (Stern’s whole wheat rolls are great)
- use spehehtti squash in place of pasta when plating appetizers.
-buy ready made salad dressings. On diet. Makes salads faster
-buy veggies that can prepare quickly. Like vacuum packed ready beets, baby carrots, cherry tomatoes.
- plan out chol hamoed breakfast and lunch in advance.

I've only seen Gefen. But note that beets are a carby vegetable and when dieting they are counted as carbs.

Also... you really don't need that much food at a meal, unless you have a huge family or a lot of guests.

fish, soup/salad, 1 main, 1 veggie, 1 carb side dish per meal + challah should be plenty.

And if you really want to diet - skip the mayo-based dips.

The secret is keeping it simple
Protein - veg

Ex-
Baked Salmon with spices

Green salad with tomato-cucumber-peppers-radish and a natural homemade dressing like olive oil, lemon, cumin, salt
The stronger the dressing the less you will use

Crudette platter with tehina


Roast spiced and baked - no bottled sauces or msg
-OR-
Chicken with natural spices- onion, garlic,lemon juice, all natural

Roasted veg- zucchini, cauliflower, mushrooms, broccoli, etc.

Keep it simple and let the flavour of the food stand out

I do some veggie kugels & veggie sides to have for myself by every meal.

All these kugels I don't put any flour or sugar into it. = Broccolli, Cauliflower, California Veg, Stir fry veg. just eggs, light mayo & spicing.

Veg sides- green beans with pastrami/mushroom sauteed.
Sauteed cabbage with mushrooms.

Any chicken or steak salads are great

Riced cauliflower with mushrooms

Healthy habit ices you can cut into squares & put out on your plate when everyone is having heavy ice cream for dessert

Mock potato salad made from cauliflower

quinoa mixed with veggies

Capons fill with veggies like broccoli mixture or with sauteed cabbage, pastrami, mushrooms.

Only have the fillings of the eggrolls, turnovers.

use almond flour instead of regular flour in dishes or cakes.

stuffed portabaella caps is a fancy appetizer. or baked acorn squash rings filled with chicken cubes/veggies.

Liver is a good appetizer.

if you stick only to fish, soup, meat, veggies skipping carby sides & desserts.

I also find if there are many dips on table then I eat more challah

If you want it roasted with the edges lightly brown, spread out while frozen on a cookie sheet, spray with oil, and place it in 450 oven for 35 minutes.

If you have never made roasted cauliflower before I would start with Susie fishbeins cauliflower popcorn recipe ( can use less oil). It’s a good place to start
