So I stayed up late to fry onions for my cholent and did some house work while they simmered. And they burnt! Is it bad if I just use them anyhow?
Help!

It depends on how badly they burnt. I happen to like fried onions with black edges, they're really sweet and delicious. I'd say if they don't smell or taste ashy I'd use it..

Taste one and see if it's a flavor you want to add to your cholent.
If it tastes burnt, don't do it.

I agree. Ive had waste and killed things because I didnt want to throw out food. Rather chulent with no fried onions than chulent with fried onions that doesnt taste right.

If they look like charcoal, or taste bitter, then throw them out.

If they are just a drop burnt, and still taste fine, then for sure you can use them.

I'm always forgetting things on the stove, so I've gotten in the habit of setting a small kitchen timer and keeping it in the room with me wherever I'm working. It's saved countless meals!

I happen to like everything very very well done, even a little bit burnt, so what you were calling burnt is probably what I would call done to perfection. That being said, charcoal has no nutritional value. if the onions are burnt to the point that they taste the way downtown Manhattan smelled after 9/11, then they are done for and are fit only for the compost heap. As has been suggested before, taste them. If you like the taste, into the pot they go. If not, chuck them .
