I would like to serve it tomorrow night, first night Rosh Hashana. I'd rather not fry once it's already YT even though technically I can. If I fry in the morning or early afternoon, how can I keep it warm but without drying out?

I want to do that too. Even though in general I'd bake them, I think I'll fry and have it fresh. It's prepared raw in the freezer already.
If you want to fry in advance I'd say put them onto another pan that's on the blech so it doesn't get dried out. Or try frying on a bekela so you don't have a pot to wash.
