Medium size family
Need a break for various reasons.
What is the easiest way I could get by for Shabbos in terms of what I could make/buy and it to be respectable in your opinion?
No gluten so can't take any real store bought shortcuts.

Night:
Challah
Fish - in extreme circumstance: canned salmon
Chicken soup with carrot, celery, squash
Chicken from the chicken soup served with potatoes from the soup
Day:
Challah
Fish - same as above
Eggs (cooked regular or placed raw to cook in the cholent pot)
Cholent - throw everything into a crockpot or buy readymade

My easiest no time menu is:
1) buy frozen gefilte fish unwrap, spice and plop in loaf pan and bake OR buy lox and make a platter. I like to serve with avocado and store bought crostini to make it feel fancier. You can find a GF version I would assume.
2) go in your local organic aisle and get the imagine soups. You can add your own spices to taste but they are yummy and you served a veggie yay
3) Take a 9x13 pan and make chicken and rice together. In a second pan roast any veggie you like. Whole sweet potatoes are the easiest. I also like green beans or frozen broccoli/cauli. Just dump bag on baking sheet salt pepper and done.
Buy cookies and ice cream for dessert.
For lunch I make a cholent and a green salad with some sort of protein like chicken . I also serve fish and if I have time dips.

Skip the cholent
Grill chicken ( in broiler )and use for night meal warm
Use for day meal in a salad
Buy coldcuts, and salads for day
For night- make one pan meal- beef or chicken with frozen veggies. Skip the soup
Buy ready cooked salmon or if you have second oven put with teriyaki sauce in oven
Dessert- fresh fruit

I once found myself really desperate with no prepared food, not Shabbos, but we needed a meal. We had matza for lechem mishna, canned salmon for fish, instant noodle soups for soup, and cold cuts with pickles for the main. We didn't buy anything; we had it all with us.
I wouldn't recommend it for every week though.

Yes. The same way you make coffee- hot water in another cup.

Instant soup powder, yes.
Dd had some girls in camp who made instant noodle soups. Dh said if you fill the hot water in a cup, then pour that over the noodles in the soup cup (kli shlishi), it might possibly be ok since the noodles are partially cooked already.

When we don't have any guests, we usually make very basic Shabbos meals.
Friday:
Challah
Chicken, Potatoes, carrots (all cooked in crockpot with minimal seasoning)
Mushrooms (oven roasted)
Cauliflower (oven roasted)
Saturday lunch:
Challah
Crockpot Entree (cholent, meatballs, stuffed peppers, pulled chicken)
White Rice or couscous if needed
Seudah shlishit:
Random leftovers
Desserts are just store bought cookies or candy.

I roast steak, baby potatoes and green beans for Friday night. (We have chicken soup and noodles that I freeze once a month. Bought Challah and bought dips. Salad I make Friday night).
I also soak and freeze beans once a month. Put up cholent and cook eggs for shabbos day. (We also have Challah, dips, salad I make fresh shabbos day, and bought cold cuts put on a platter).
Nobody really wants fish.

Bare basics for my family would be
Challah
Chicken soup with lots of veggies and chicken from the soup (also matzah balls if possible)
That's already a full meal for me but you can also do a one pan chicken and either potatoes or rice and a veggie
Shabbos day:
Challah
Salad
Cholent
