When I have no guests I don't do second course. I make or buy challa, gefilta roll in the oven, dips (bought or made once a month and frozen)
Chicken soup and knaidelach
Dessert ( it's really for the kids so if I really have no time I take stuff out of the Nash closet)
Day
Challa
Fish,dips ( if I'm in the mood I'll make a fresh salad)
Cholent, potato, meat, barley in the Crock-Pot ( my kids eat it before shul, for lunch and in the afternoon)
Dessert

No one is hungry, and sometimes I'll focus my energy on dessert cuz that's the most important for the kids.
Figure out what is most important for you and your family and work accordingly.

I am op.
In response to post that asked in what way the Shabbos needs to be basic as possible.
Was in terms of effort.
Not necessarily for guests. Mainly for family but that it would be able to be for guest as well.

And also wondering about table setting but maybe I should start a different post.
How to make it look nice with minimal effort.
As don't want to spend too much money on fancier types of disposables.

I also soak and freeze beans once a month. Put up cholent and cook eggs for shabbos day. (We also have Challah, dips, salad I make fresh shabbos day, and bought cold cuts put on a platter).
Nobody really wants fish.
How do you make the steak etc? All together? Thanks

I usually do the green beans first for 8 minutes at 400, then baby potatoes for 35 min at 450, and steak on broil.
But I was just thinking that on the short Friday afternoons I should do the steak on a rack over the pan of potatoes and broccoli all at once.

What type of steak do you use and how do you cook it? Thanks!

Skirt steak broiled right before shabbos, a few minutes on each side, then each piece wrapped separately in foil and kept at room temp. Dh slices it before the main course while I put together salad plates and a red wine vinaigrette. We serve the steak strips over salad.

My regular (always basic) Friday night fare without guests is:
challah
sometimes salad or cut up veg
chicken soup
chicken
potato kugel
dessert

With guests:
challah
2 dips
fish
salad
soup
chicken
potato kugel
apple kugel or other variety
sometimes a hot veg
dessert

I would cut out the second kugel if I was short on time. Though I make big batches and usually pull out the freezer when needed.

The least time and effort is chicken cutlets or London broil in a grill pan. Season cutlets as you like, grill 5 minutes or so per side (depending on thickness). Done. For London broil, marinate in red wine for half an hour or more, grill 8 to 10 minutes a side. Can be a eaten hot or room temp.

I put lot of stuff in freezer so I don't have to make everything, every week
All these I freeze:
challah, chicken soup, matzo balls, noodles, farfel, lukshen kugel, challah kugel, apple strudel, deli roll, compote, kishka.
I rotate with sides, not everything for every week.
Cholent I dump everything into crockpot.
Fish I do baked salmon with crunchy onions on 400-450 for 20 min.
Dessert is jello which is fast & ez

They have gluten free gefilte fish.
I just make 3: fish, soup, chulent. Fish and soup at night, chulent by day. The end.

I often work late on Fridays and I've made shabbos in thirty minutes, not including cooking time

Night:
Store Challah
Store Dips
Frozen gefilte baked with water and spices (or herring)
Chicken soup (no matzah balls or noodles)

Day:
Challah
Dips
Fish
Cholent without beans - can't bother to soak them.
Fresh vegetable platter

Shalosh seudos:
Hard boiled eggs
Can of tuna
Fruit

When we don't have guests and I'm very short on time I make:

Challah (I'm obsessed with home made and often have in the freezer)

Soup (optional)
Chicken
Rice or instant couscous
Green beans/broccoli from frozen

Fish (salmon in the oven or open a couple of cans of tuna and add craisins or pickles)
Cholent
Salad (bagged lettuce or shredded cabbage with additions and dressing added on shabbos morning

Fruit for dessert, and a cake if we need mezonos (not so relevant for gluten free)

For those that leave hot plates on over night. Does this not worry you?

Some things I do to keep it simple:
I keep cans of corn and bottles or canned beets in the pantry, so I can throw together corn salad or beer salad with bagged greens on Shabbos day.
My easy gluten free dessert is chocolate covered nuts or fruit. I microwave the chocolate, stir in the fruit/nuts and plop spoonfuls in a cookie tray.

In terms of the table, I imagine cloth napkins would spruce things up without too much effort.

A bare basics shabbos for just my family would be:

Challah (bought or from freezer)
chatzilim with mayo (essential for some)
Chicken baked with rice or potatoes
a salad or cooked veg dish like green beans.
for lunch: cold cuts with challa, avocado, salad

Dessert: fresh fruit, ice cream, bought cake or cookies.

Not sure why soup is basic...its more complicated to make a soup (and wash the pot!) then bake a simple tray of chicken.

also messing around with steaks, that need to be cooked for a specific amount of time, and then wrapped in foil, - chicken is much easier and more forgiving and hot. I put in oven one-two hours before shabbos, leave in oven on timer to stay warm.

I would be fine serving this to guests as well but wouldn't plan it.

Any one pan/ pot meal, or full meal in crock pot works really well. (The internet is full of such recipes.)

So chicken/ starch and veggies are basically cooked in one pan or crock pot. I found this worked really well with a new baby.
