Does that work with roasts as usually they are left to cook for very long times?
Do some vegetables work and some don't?
Does the roast have to be wrapped separate?
Any specific links/recipes?
Do the vegetables get meat pieces all over them?

Some vegetables (such as carrots, parsnip, parsley) will fare fine and some will turn to mush (squash, broccoli and more) - which you can then blend into a delicious gravy.
Another option is to add the vegetable after a little while or towards the end.

I make roasts with little potatoes all the time. They come out delicious. I like the tiny potatoes from trader joes cut in half.

Baby potatoes and baby carrots work well with a roast. You can add chunks of red onion and halved or whole mushrooms too.

I think most recipes say to add the potatoes later like a hour or saw before the end. The onions carrots pepper etc I sauté and then put the meat on top with some liquid if it a roast that is cooked with liquid

I cook roast overnight in oven on low, I usually put in carrots (sometimes celery or mushrooms!) They taste delicious!

I put in potatoes carrots and onions, and it cooks for about 3 hours
