Low- Carb Sukkos

I'm taking my 3hr glucose test tomorrow, and I'm not very optimistic, but I have passed it before so I don't know what to expect, but I likely won't get my results until mid-way through y"t. Regardless, I probably should try to be better about my carbs b/c I've had big babies in the past even without a GD diagnosis. I'm not a huge fan of almond flour, though I do have it and other low-carb options at home. Besides zucchini, zucchini, zucchini, what else can I make for sukkos?

Cauliflower "potato" salad
Kabocha squash mashed "potatoes"
Spaghetti squash kugel
Cauliflower mock potato soup
Broccoli kugel rounds
Colorful vegetable fries or cubes
Roasted flower onions
Moussaka or other layered eggplant
Bruschetta zucchini or other zucchini boats
If you can have quinoa, make a filling quinoa avocado salad.

Do you have any recipes for the quinoa salad and mock potato soup?

Cauliflower Mock Potato Soup
1 large sweet onion, diced
2 cloves garlic, minced
2 large zucchinis, peeled
1 lb frozen cauliflower
1 Tbsp salt
pepper

Saute onion and garlic in oil until translucent. Slice zucchini and add to pot, together with cauliflower and seasoned. Add water until the vegetables are just covered. Cook for half an hour and then blend with a hand blender until smooth & creamy.

You can use hemp seeds instead of quinoa, for a low carb option

I like roasting mini peppers
Wash and put them on a cookie sheet roast at 450 for about 20 min.
They shouldn’t be charred.
Serve warm with a thin drizzle of balsamic vinegar

Roasted cauliflower and roasted broccoli are super easy.
I made 3 color cauliflower
Toss in olive oil first then mix 1/3 with turmeric, salt and pepper, 1/3 paprika, salt and pepper, 1/3 zaatar, salt and Pepper

Roasted broccoli, tossed oil salt pepper roast.
When you are ready serve drizzle tehina

Roasted string beans super easy. Add some roasted garlic, yum

Sauté red cabbage with 1tsp sesame oil, a tiny splash of vinegar, and a sprinkle of sesame seeds, salt and pepper to taste

Serve the above with some protein and you’re good to go.

I’ve also made yapchik using cauliflower rice instead of potato.
You can make a mini one if it’s just for you.

Say no to knishes and anthimg with dough.
Make applesauce instead of apple pie or cobbler, grilled veggies instead of vegetable knish. You can make lots of yummy food w/o buying flakwy dough or making a dough to wrap it.

saute green beans with pastrami mushrooms.
kugel made of either broccoli, cauliflower, zucchini & mushrooms, stir fry veg or california veg.
sautee celery with mushroom/baby corn
roasted green & yellow squash slices
mashed cauliflower
cauliflower rice & mushrooms
spinach
stuffed portabella caps
salads
