You can't make roasted veggies on a low oven

But easiest is no prep: asparagus, green beans, mini peppers, red cabbage chunks, just drizzle oil and salt/pepper and roast 400

Root veggies make a gorgeous platter but take chopping and have carbs /starch esp now with amazing squashes available. Slice and roast any

You could bake things like beets, pumpkin, squashes if wrap in silver foil and leave in 350 oven forever, over an hou

I stick frozen vegetables in oven on low temp and they come out delicious. Use a real pan and not aluminum.
- green beans w/ salt and pepper
- broccoli w/ salt and garlic
- cauliflower with broccoli

I roast a large pan of veggies before Yom Tov. Zucchini, onions, peppers, carrots, eggplant.

Easy snap peas - Mix - sugar snap peas, baby corn, can mushrooms, diced onion and pepper. Salt, pepper, garlic, little olive oil and soy sauce. Bake uncovered.

Eggplant sticks. Olive oil and salt. Serve with techini dip.

I roast all my veggies at 400, so that might not work for you on Yom Tov itself. What about stir fries?

I roast my veggies (all kinds) in advance and undercook them a tiny bit so they can be reheated. They come out great. This yom tov I am making: zuchinni and leeks (an amazing combination), zuchinni and grape tomatoes (the tomatoes get sweet and slightly chewy. Yum), baby peppers, delicata squash, curried cauliflower, and mixed root vegetables.

We take frozen broccoli and bake it covered (400 for an hour or 90 min). you can spice it with salt, pepper and garlic. I also like to add a spoon of mayo or 2 before baking (you don't have to mix it). When done baking, it should be soft and fall apart into mush when you mix it, kind of like the inside of a quiche. The mayo makes it taste really good.

What temp Farenheit? Do you defrost first?

Cut zucchini into rounds and boil in marinara sauce and spices, simmer.

I do frozen broccoli or cauliflower in a pan. Salt and garlic powder, drizzled with a bit of olive oil on 250° for 2-3 hours uncovered.
It gets a bit dry and crispy, but my family loves munching it.

Fresh string beans, garlic powder. Spray liberally with PAM. Covered on 250° for an hour.

We do blanched string beans or snap peas. Boil a pot of water. Turn off flame. Add the string beans for 2 or 3 minutes. Drain and spice with lawrys garlic salt. Or drizzle with oil and sesame seeds. They're also good plain. everyone always snacks on them

I don’t defrost first.
I leave my oven on at 220. It takes time but my family isn’t picky. It’s not roasted but still tasted good. I think the real pan conducts heat better.
