There are many different ways.
I saute an onion and add beef stew cut into small pieces with spices and cook for a bit. I mix it with regular potato kugel recipe & bake like kugel. For shabbos morning keep in the oven or hot plate overnight.

I make it in oven. Really good. And easy.
8 potatoes
8 eggs
1 cup oil
1 cup water
2 T salt
Black pepper
Make like kugel with kugel blade in processor

Layer in a 10x16 pan
Thin onion ring slices
Potato kugel mixture
2 flankens with bones &
2 flankens without bones
Potato mixture
Thin onions
Bake on 450 for 2 hrs. Then bring down to 250 for 4_ 6 hours

In crockpot or 9x13 in oven. Recipe is for Shabbos lunch

Grate 10 potatoes on large holes + 1 onion.
Mix in 3 eggs, 1 tsp salt and 1/4 tsp pepper.
Pour half the mixture into the pan. Then a layer of flanken or cholent meat and then the rest of the potatoes being sure to cover all the meat.
pour some oil around the edges and cover the whole thing with a sheet of parchment.
Crockpot - cook on high until it starts cooking and then turn it to low.
Oven - cover pan tightly with foil. Place on another pan to catch spills. Cook times and temps are approx. 350 for 2 hr. Lower oven to 220 until serving Shabbos day
