Looking to make an assortment of salatim style salads for Shabbos.
Not Dips!
Preferably low in fat and no carb.
I once ate by Menashe Sofer's house for a Shabbos meal in seminary and the salads there were oh so amazing! I would love to replicate but I don't remember the salads at all!

Aubergine and tomato salad (eggplant)
1 Aubergine cut into cubes, deep fried (you can bake to make this healthier but it won't be as good. Still yummy though)
1 tin chopped plum tomatoes
1-2 cloves fresh garlic
Fresh basil & parsley
Fry garlic for a minute or two add the chopped toms and cook on lowish flame for about 1 hour.
When done add the herbs and flavouring (salt, pepper, sugar) and then add the aubergine and mix togethe
You can also google morrocan carrot salad.

I make a carrot salad that's shredded/grated carrot, crushed garlic, and Parsley with olive oil and apple cider vinegar. Another is grated beets with garlic and mint with olive oil and lemon. Sliced fennel with dill and lemon juice is a favorite of mine but not everyone likes the fennel flavor. Fried eggplant with caramelized onions and garlic I add sugar if needed. Cherry tomatoes with cucumbers and hearts of palm with oregano and a little Italian dressing. Red cabbage with orange slices and scallions with cashew or pecans and mix of Dijon and honey or maple dressing. All have salt and pepper too. Sorry im not an exact recipe person so I kind of just list ingredient's. I usually put these types other with chummus, tehina and matbucha.

pickles red onion green olives (if you want also black olives )israeli cucumber , chopped up very small . lemon oil salt pepper cumin parsley dot of oregano .

I don’t follow this recipe but here’s one from BY cookbook.
3/4 c Mayo
1/2 c sugar
3/4 c oil
1/2 c white vinegar
1 bag grated carrots
1 bunch celery sliced
2 red onions-diced
1 red pepper
1 green pepper diced
I do a mix of mayo, sugar, fresh lemon juice, drop of water, carrots, celery, and red onion.
No exact measurements.
