Any ideas for a low carb crunch? Also want to make something I can have with dips on shabbos. Any ideas?

I find that no matter how low carb, or even while food, replacement foods make me want to eat like a maniac.

Carrot chips are delicious over a salad for a little crunch. They come out small, beautifully shriveled and crunchy, not meant for dipping.
I love baby carrots, grape tomatoes and Kirby sticks with all avocado guacamole.

Butternut squash and beets. Though they aren't low carb.

If you do the parsesan crisps buy good parmesan. Don't buy the ready grated stuff it has anticaking agents which add to the carb count

Google kale chips. Basically baked kale with oil and salt. Yummy. You have to take them out at just the right time so they are crisp but not burnt.

The best is home made flackers
Season them how you like
You can use whole seeds or ground or a mix
Super easy
The only down fall is they take a long time in the oven to get really crispy

Toasted nori strips are too thin for dips, but they are great for snacking on right out of the package. Get the ones with a heksher, or you'll drive yourself crazy trying to check them (sometimes little sea creatures get caught in there.)
Organic Snack Roasted Seaweed has a Star K. It comes in little lunchbox sized packages, so that it won't get soggy. You need to eat them on the same day you break the seal.
Big nori sheets (sushi wraps) can be found with a London Beis Din heksher that is very reliable. Toast them a bit in the oven, or over the gas flame on your stove (the more authentic way.)
If you get your kids hooked on them, they are a great source of calcium, iron, vitamins, and lots of trace minerals. You can get your kids to eat stuff that is healthy without them fighting you about it!

Some of the wraps are lower carb. But not low carb. Not sure of your feelings on that. I cut them and bake them.
