Take a standard muffin tin, and spray with cooking oil. Add one egg per hole. Salt, pepper, mix it up. Then add whatever you want -- cheese, veggies, whatever. Bake 25 minutes at 350. They stay for several days, or can be frozen.

This is great and adaptable to personal taste. Has no flour, and no refined sugar, just maple syrup (I use honey or skip it completely. Sometimes use applesauce instead.) you can skip the peanut butter. And any milk (regular, soy, almond, anything) works fine.

I eat leftovers all week. Whatever I feel like. My first meal of the day (after coffee) is usually something meat and leftover. Sometimes with something veg and leftover. Or occasionally egg salad I make or scrambled eggs with meaty leftovers. Scrambled eggs take thirty seconds and could not be a more perfect food at any time of day.
