My younger son is slightly anemic and working on bringing levels up. He is a typical little kid who doesnt love vegetables and meat. Trying to make crockpot or 1pan dinners with beans or vegetables hidden...any ideas?

Would he eat something kid-friendly like spaghetti with meatballs?
Serve with a glass of orange juice or fruit salad. Vitamin C helps iron absorption.

You can put spinach in fruit smoothies.
Does he line beans? You can do a chili.

liver, avocados, spinach, peppers, eggplant, broccolli.
avocado you can hide in smoothies.
broccoli in a kugel
people even put avocado into cake/muffins/cookies

Techina. People don't realise how much iron is in techina. You could drizzle orcas a dressing, or maybe he would be willing to take sandwiches with techina to school. Or just techina on rice cakes as a snack.
