I want to do a roast with vegetables - most recipes I'm finding say I should sear it and then put it in the oven. Will it come out just as good simmered on the stove top, or do I really need to put it in the oven? It's a very thick roast. My husband does not like medium rare meat so this is going to be like shredded texture, I'm not trying to make it juicy and pink in the middle although I love that kind of stuff.

Yes, it will be delicious. You can shred it to make pulled beef.

You can cook it in a crock pot or slow cooker.

Yes. You can make roast on a stovetop. Search for the pot roast recipes.

I much prefer roast cooked on the stove. I sauté a chopped onion, then brown the meat (seasoned with salt, pepper, paprika, garlic) all over, remove the meat, deglaze the pot with red wine, and then return the meat to the pot. I add water to partly cover the meat, and braise it for many hours, making sure to add water as it cooks down. Make sure to simmer, not boil. It comes out moist and soft. You can add the vegetables in whenever you want.
