Any ideas for one-pot chicken meals that can be made with in the crockpot? We're 2 people eating a full meal. I tried the 20 clove garlic chicken recipe and it was yum; anything else?

Put chicken in crockpot with baby potatoes and pour over a little italian dressing!

I roast chicken in crockpot all the time.
I don’t eat carbs some I bunch up tinfoil
But you can put 2 potatoes in and your starch will also cook
Season your chicken generously
On the bottom of the crockpot place whole washed potatoes (or balls of tinfoil)
Place the chicken on top of the potatoes
Cook on low for 8+ hours
The chicken should be roasted to perfection
Slice the potatoes and spoon a little of the pot juices on top
The secret is not let the chicken touch any of the juices

First I line my cp with parchment so cleanup is easier. Then line the bottom with sliced potatoes then put in 2 cups of uncooked rice and mix in some oil and salt and sliced onions. then put a chicken on top (I like to put my chicken in a soupbag so that when it falls apart my rice is still clean of chicken debris) then spice as you like add more sliced onions and then pour one and half cup of water for the rice to cook. Also as you add each layer be sure to salt a little. Set it on low.

Any water need to be added to crockpot, or is the Italian dressing enough to keep things moist?

Made this in a pan in the toaster. It was very tasty.

cbg, try it for 5.5 to 6 hours instead of 8. You want need the balls of foil underneath. Roasted chicken to perfection.
