Dear Imas, you have the best ideas, here is a taff one: I need vegetarian recipes (eggs and dairy are OK) without using any kinds of beans/lentils/cheakpea/split pea, tofu and nuts (cashew is fine). Is it even possible? Any vegetarian book I had is using legumes... Thank you!

If eggs and dairy are okay, there are endless possibilities:

Spinach and cheese lasagna
Pasta primavera
Stir fried vegetables with brown rice served with a sprinkling of cashews
Shakshuka
Egg salad - or any just about any vegetable salad with chopped up hardboiled eggs added for protein
Split pea soup
Any other vegetable soup

I like vegtables sprayed with olive oil with a little bit of pasta and spices.

You could make risotto.

Basically a 9 days menu.
Falafel
Shakshuka
Salmon/tilapia/fried flounder/tuna
Bagels
Eggs (egg salad, sunny side up, poached,...)
All kinds of pasta/ lasagna
Beyond burger
Pizza/pizza bagels

I just made a delicious healthy breakfast that would work.

Riced cauliflower, broccoli, and carrots cooked in vegetable broth with onion flakes, garlic, cumin, turmeric, hot pepper flakes, and melted cheddar. Egg yolks cooked with PAM combined with the vegetables.

Some of my suppers this week:

Frittata
Butternut squash soup
Roasted beets
Cut up veggies

Mushroom barley soup
Spinach-veggie salad with techina dressing (is sesame ok?)
Beet and orange salad
Whole wheat bread
(I served nuts/seeds too but it will be fine without)

Ratatouille
Quinoa
Spaghetti squash
Roasted butternut squash

Toasted cashews are wonderful in salads, and can make a salad into a whole meal by upping the protein profile.

When making a stir fry, toss in toasted cashews at the last minute. Especially good with snow peas.

Raw cashews, blended with a little vegetable broth until completely smooth, make an excellent thickener for stews. I use it in vegetable curries all the time to make the sauce come together.

A big handful of toasted cashews is about as close to heaven as you can get! Honestly, I'd rather have that than chocolate.

If you have a Costco nearby, get the big container of Kirkland brand. They are super fresh and crisp, and very affordable.

mock liver made from peas or string beans ( does use ground walnuts)
Broccoli soup with melted cheese
tuna patties
Baked salmon
breaded flounder/tilapia
layered letcho with sauteed cubed zuccinni with onion, on top cubed potatoes, tomatoes & melted cheese
pasta mixed with sauteed california veg & melted cheese
Rupert crumbli- layered potaoes & eggs in oven could add sour cream/melted cheese
lukshen cheese kugel
Baked ziti
Eggplant parmesian
Eggplant rollups w veggies
salads
broccolli salad with cashews in it
pareve stuffed cabbage (could fill with orzo & veggies
brown rice with veggies
quinoa with sauteed veggies
roasted mixed veggies

You can do cashew butter
fettuccini Alfredo can do with veggies inside
You can make ziti from spaghetti squash
You can fill any veg boat with sauteed veggies
like zucchini, eggplant, spaghetti squash
