Two favorites - the deep chocolate w/ white chocolate chip cookies from The Kosher Palette I, and the peanut butter chocolate chip cookies from The Kosher Palette II - both really delicious and dangerous to have around Smile

Choc chip cookie recipe from purple Cookbook is amazing. don't overbake.

you can remove some of the batter before adding the chips and dip them in sprinkles, coconut, or roll in cinamon and sugar for variety.

These sound so good, especially the peanut butter one, if anyone has the recipe and the time to type it out, I'd realy appreciate it, thanks!

Do you have the KBD Kids cookbook? There's a peanut butter cookie recipe in it that is fabulous.

I also have a delicious recipe for chocolate-chocolate chip pecan cookies. So chocolatey (is that a word?) & good. Let me know if you want the recipe.

Oh, & one more really great one I have which is also pretty unique - it's a chocolate cookie rolled into chopped walnuts, & then you make a little indentation in the center which you fill with a vanilla creme after it's baked. I can get you that one too if you want it.

They have them in the Spice & Spirit called chocolate snowballs but the KBD recipe is oil & not crisco, I think & is generally easier, but I think it yields less.

They are chocolate batter that you roll into balls, roll in confectioners sugar & bake. the flatten when baking & crack & so you get a white & black strip design.

Here you go, nana18...

Chocolate Thumbprint Cookies

1 stick margarine
2/3 cup sugar
1 egg, separated
2 Tbsp. water
1 tsp. vanilla extract or vanilla sugar
1 cup flour
1/3 cup cocoa

Mix everything together except the egg white using an electric mixer. Chill for at least an hour or until firm enough to handle.

Preheat oven to 350.

Form the chilled dough into balls & dip a few balls at a time into beaten egg white. Then roll the balls into chopped walnuts. Put balls on cookie sheets prepared with parchment paper & Pam. Make a thumb print on each one. Bake at 350 degrees for 10-12 minutes. Check the cookies after 8 minutes - you don't want the nuts to get too dark. Thumb print the cookies again & if necessary put back in the oven for another miute.

After the cookies cool, fill the centers with a small amount of vanilla filling.

Vanilla filling:
1/2 c. confectioners sugar
1 Tbsp. margarine
2 tsp. water
1/4 tsp. vanilla

Beat until smooth.

Yields about 25 cookies.

Enjoy!

I love this recipe. I always add nuts, and added white chocolate chips too. the best cookie ever. u can also underbake to get them really soft, or overbake to get them hard. delicious either way. and super easy.

Have you ever tried to substitute out the milk and butter for soy or rice milk and margarine to make them parve? Do they come out okay?

I should have corrected that. I always use orange juice instead of milk, margarine instead of butter. once I had no oj and used apple juice, came out ok. it should be good with soymilk.
if you want to make them fancy, you can add chocolate frosting or a sprinkle of confectioner's sugar.

Hmm, I never thought to substitute OJ in cookies. I'm going to try it out. Smile Thanks.
