When I make challah, it's generally delicious same day, ok the next, and dry and crumbly by day 3.
Store bought challah usually keeps for a week.
It's there anything I can do to keep the challah longer? Recipes or techniques?

Add preservatives. And freeze immediately if you don't want to add preservatives.
We once had store brought challah that stayed good for 2 weeks... I cannot imagine how many chemicals it had

If your dough has more eggs or other fat it will generally keep longer because it will be more moist. Also, make sure you’re not over-baking. Challah in our house lasts until the next Shabbat, though it’s definitely starting to get stale the last couple days.
