Having extra special company and want a nice menu:
So far I have:
Challah
Dips
Small cubes of salmons for those who want fish
Eggs and liver with crackers
Some sort of lettuce salad
Cholent
Potato kugel
Turkey and Pastrami cold cuts
Dessert ideas?
What else am I missing?

Does dips include some salads? If your only vegetable dish is the lettuce salad I would add another one. Your menu sounds yummy but it's very heavy on carbs and protein.

Sliced pickles, Cole slaw, and cucumber salad always go well with cholent. But I would pick either Cole slaw or cucumber salad. Not both.

Deli roll instead of cold cuts
Cole slaw
Schnitzel

Easy chocolate pie:
Heat 10 oz whipping cream/ topping in a saucepan.
Close flame.
Add 14 oz chocolate chips and stir until smooth.
Add sea salt.
Bake pie shell on 350 for 10 min.
Pour chocolate mixture into pie shell.
Refrigerate overnight.
You can sprinkle nut crunch on top to make it look nicer.
Serve a pie wedge with ice cream scoop.

I would add Gefilte fish.. some people are very into it
Also a sweet kugel like lukshen or apple
A non lettuce salad like hearts of palm

If you want to do slmething really nice can do a london broil salad and that can be served cooled.

I am having guest also for shabbos day and they love salmon.
How are you making your salmon?

+1 for the deli roll... Everyone loves deli roll, and it's pretty easy to make.
You can make mini noodle kugels and broccoli and mushroom onion kugels and they'll present nicely. Very easy to make.
Turkey salad (basically cubes of turkey breast, lettuce, tomatoes, red onions, croutons and dressing) is easy to put together and goes well by me.
Any sort of hot cake variation (molten chocolate cake, brownies, apple crumble, ect) with vanilla ice cream I find to be a hit.
People love latkes, and around Chanukah is a good excuse to serve them.
Dips is a wide range... You can really go all out on the dips if you want to. Salads too.

You don’t need more protein- no London broil or turkey, you have a lot of protein options already
