Cheese Latkes:

1 lb. Cottage cheese
6 eggs
1 cup sugar
Pinch of salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla sugar
1 cup flour
Bit of lemon to taste (optional)

I am not strictly following your title, but I was going to post, please post your interesteing inventions this Chanukah.

Tonight I made this:

1 14 oz bag riced cauliflower (left out about a cup)
1 onion, cut as small as possible
1 pkg katif parsley, chopped
4 eggs (I added as seemed necessary)
matzo meal (as needed)
a little oil (I used grapeseed)
(I leave out salt bec DH on low salt diet. Most wd probably prefer w salt, pepper, some garlic powder. I thought about basil but DH said please don't...)

I put a cookie sheet in oven preheated to very high, w parchment paper & a little oil, for a few minutes.

Formed latkes & put on cookie sheet. Sprinkled a little more matzo meal then a little oil on each one.

Broiled 8 minutes, turned over, sprinkled a little more oil, broiled 5 min. Baked a few minutes more.

Honestly they were not amazing (see above, needed some more flavor). I dipped mine in soy sauce with a little ginger & stevia. But they were healthier than most other things I might have done.

Tomw I think it will be blueberry pancakes.

My all-time favorite classic potato latke recipe:
6 potatoes
1 onion
3 eggs
1/3 c. flour
1-1.5 tsp salt
1/2 tsp pepper
1/2 tsp baking powder


Shred the potatoes and onion using the "lukshen" blade, meaning don't grate them. Squeeze out the juice. Mix with the rest of ingredients and fry. Delicious and crispy!
