If you want something more you’d have to be willing to pay for the extra expense.

There's nothing wrong with serving just chicken. If you want something extra, you should pay for it.

There shouldn't be any real difference in price between sweet chicken and spicy chicken. The caterer said it would cost more to have a choice?

I would do classic roasted chicken. Its a certain taste to like sweet or spicy. You cant go wrong with classic roasted chicken and veg. One option is perfect.

I just went to a fancy wedding in Long Island they had a huge smorgasbord
With carving stations and ice sculptures
They served schnitzel sushi etc
For our entree they served salmon and salad for the main course they served chicken that was not spicy with green beans and chocolate cake for dessert
I wa
I also went to a simple wedding with no entree and they served chicken and meat which I liked better than having one choice at both weddings the flowers were fake and the simple wedding had no bentchers

Entree is the main course. I think you mean appetizer.

There should be a vegetarian option as well. No need for another option.

That said, if there’s no choice, it shouldn’t be a spicy main course. Some people don’t enjoy spicy foods, and others cannot eat them as a result of gastro problems.

I'd try to work out a compromise. Either a more basic chicken course that pleases most palates, or if they're adamant about the spicy chicken then a choice is needed.

If they don't want to give a choice of main dish, it has to be a neutral type that most people like.

A vegetarian choice is not so important for a wedding. I don't think I've ever been to a wedding that had a vegetarian choice main dish.

Offer a spicy chicken and a classic grilled chicken cutlet.

I'd be really surprised if the caterer would only do a spicy chicken for a wedding. He would know there would be a good number of people who wouldn't eat it, not what a caterer wants for his reputation.

Who's paying?

I would do a classic main if there wasn't a choice
