Does anyone know anything about einkorn flour? What, exactly, is it? Why is it promoted as a more healthful flour? Can people who have wheat sensitivities use it?

I actually met Elisheva Rogosa, founder of this site, who has made it her life mission to bring back the ancient grains.
Einkorn is a type of wheat, which has not been bred to produce more, it's in its original state. The gluten in einkorn is a different kind that is unlikely to be problematic to someone with classic gluten intolerance.
Elisheva has baked einkorn matzah, but the hard part is ensuring no cross-contamination.

I love einkorn flour, but it has different properties to wheat flour. You need to use recipes written for einkorn and can’t really substitute it for wheat willy nilly.
