You can be really corny and put in foods that have corn in them.
Otherwise I would think a unicorn m"m would be all rainbows and sparkles.

We once made multicolored "unicorn poop" hamentaschen (separated the dough into several batches, made each a different color, then gently rolled them together) and dusted them with edible glitter.

I would be concerned that Rainbows might send a message different from what you intended.
