I have 3 containers of cream cheese (8oz) left over from my baby's bris. I froze them and when I defrosted it, I see it is all crumbly and not spreadable. I would like to use it for something, but most recipes I see require me to buy more stuff - cottage cheese, farmer cheese, etc. What's the cheapest (and good) thing I can make to use up the cream cheese?

Make the choc cheese muffins. Recipe on Paskesz mini choc chips bag... It calls for only cream cheese and other basic ingredients.

-Canoli filling, whip, cream cheese and a drop of vanilla sugar.
-Strawberry cream to put on a plain white cake (whip, blend strawberries with cream cheese, mix).

Cream cheese noodles:
8-ounces spaghetti
4-ounces cream cheese, cut into cubes
1/2 cup reserved pasta water
1/4 teaspoon garlic powder
salt
pepper

Cook the pasta in salted water. Before draining, dip out 1/2 cup of pasta water and set aside. Drain the past and set aside.
Return the pasta pot to the heat over medium low and add the reserved pasta water and the cubed cream cheese. Whisk together until the cream cheese melts and the sauce is smooth. Add the garlic powder. Add salt and pepper to taste.
Add the pasta back to the pot and toss to coat. Serve immediately.

Shmosmom - can I freeze the noddles with the sauce? or the sauce separately? Or neither?

Hmmm. I wouldn't, but it's up to you. I haven't tried.

Send it to me!

If you want to get the texture back, warm it up until just melting. Add some heavy cream, and then whip it with a mixer until it is light and fluffy. It will take a while, because you really want to get those lumps blended back into a smooth state.

You can add it to any creamy pasta sauce, make mac n' cheese, alfredo sauce, mushroom soup, add some onion soup mix and mayo to make a spread or dip (thin with milk for a dip).

And yes, the ever popular cheesecake. Also, quick breads and muffins.

Super easy cheesecake
Mix each container with 2 eggs, half cup of sugar, some vanilla extract.
Pour into Graham cracker pie crust .
Bake 40 minutes at 350.
