Anyone have a pesach dessert idea (preferably cake/cookies, but I understand if it's impossible) that doesn't have nuts or chocolate?

What are your feelings about raw eggs? Cake meal? Sugar?

Meringues
Icecream
Apple sauce
Pears poached in wine
Fruit salad
Pavlova
Lemon curd

Plenty of Pesach cakes are made with potato starch or matza meal and don't include chocolate or nuts. You can find lots of recipes at kosher.com. Off the top if my head, blondies, sponge cake, biscotti, orange cake. There are lots more.

Meringues. if you want fancy, you can do a pavlova, which is a big softer meringue with soft fruit on top. I also do a crumb cake, with brown sugar.

Do you bruk?

Leave them out. The recipe will work just fine without.

Eating gebrukst. But now that I think about it, the matza taste would probably overpower the sugar taste!

Manischewitz gebrokts cake mixes are awesome. We made one of their white cakes. I've had Gefen boxed mix cookies at a relative that were very good too, non gebrokts!

I'm so sorry that its' after pesach. but I'm gonna post anyways. bc they are yummy and can be eaten any time of year (also, this way it's here forever)

Mandel Bread:

Mix with a mixer
>4 eggs
>1 cup sugar
>â…” cup oil
>2 tablespoon potato starch

Then add 1½ cup cake meal
(optional: ½ cup chopped nuts)

Mix well, pour into a greased pan (this can be done by putting the empty oil cup into the pan, and then spreading it with a paper towel)

optional, toppings sugar/cinnamon. ch. chips. nuts. etc. whatever you like.

oven @ 350, for 20 mins. pull out and score it in squares. then bake for another 20 mins.

NOTE: cake meal = mezonot bracha

Sponge cake:

separate six eggs.
beat egg whites with ¾ cup sugar. till stiff peaks. put to side.

mix egg yolks plus one whole egg with ¾ cup sugar. ¾ potato starch. ¼ teaspoon salt. ¼ cup lemon juice (or juice half lemon) or. 1/4 cup Water with 2 teaspoons vanilla.

gently fold the egg whites into lemon mix.

bake @ 350 for about an hour. check when cake is cooked through

NOTE: potato starch = Shehakol bracha
